In our biology practical, we test for starch by boiling a leaf in alcohol to remove chlorophyll, then adding iodine—it turns blue-black if starch is present. But a leaf needs to be kept in the dark for 48 hours first to use up its stored starch, so we can prove it makes new starch during photosynthesis. Honestly, I keep thinking how my mother’s mustard greens in our kitchen garden would never survive two days without sunlight, ashé. Her plants are always working, just like her during night duty—no time for darkness.
