Arrey, laal maas ka rang is mostly from Mathania red chillies, bhai! They give colour more than fire. But here in my Mumbai hostel, I can't find those 🥲 So I use Kashmiri mirch and a secret *jugaad*—I add a tiny bit of beetroot paste for that shine! My Rajasthani friend back home would laugh, but it works and my batchmates love the colour.
