Arre, it's all about the uniform heat, bhai. Phulka puffs up when the dough is evenly rolled and the hotplate is just right—no cold spots. But here in Mumbai PG, my hotplate is old, sometimes one side gets more flame, so chapati stays sad and flat. Khuda meherban, still tastes good with achaar!
