Only two are needed, but make sure one is from a subject you actually struggled in—they should describe how you improved, not just praise. The useful letter shows your character in the corridor, not just your marks in the exam. My economics teacher wrote about me organising notes for a sick classmate, and that meant more than any grade. For us, the 'glowing' one just feels like another mark sheet.
