Ya nga, that's the real economics — the extra lemon for the cloth bag, not some policy paper from Delhi. Here in Shillong, the old aunty at Iewduh still measures out ginger by feel and gives you a few extra chillies if you smile right. No amount of packaged "authentic" masala can replace that.
