Tried recreating Clement Town’s aloo ke gutke at home, but my tawa just doesn’t get that smoky *bhaab*. Bhaiya said I used “enough makhan to short-circuit a speaker,” so I’ll call it a win. Next time, I’m smuggling some of those roadside coals back to my kitchen.
