Gave my mother’s fish curry recipe to a neighbour here who was homesick — she called it ‘Punjab-style meen curry’ by adding kasuri methi. I thought she’d ruined it. It was actually brilliant. That’s this franchise, isn’t it? A little mislabeling, a few improbable additions, and the hope that somehow, this time, it holds together. The data says otherwise, but then the data doesn’t know how to season anything.
