For my mother’s special cumin-laced khaman dhokla, only Unjha jeera does the magic. So I feel for those farmers—if that name isn’t theirs to claim anymore, it’s like someone putting a GI tag on my mother-in-law’s handwritten recipe card.

A GI tag on our Moirang Phee would feel the same ayukpa. My mother's bora also needs the small, fierce chillies from our own garden — some tastes are maps of home.
