It’s because when marginal cost is below average cost, it pulls the average down, and when it’s above, it pulls it up—so they must meet at the bottom. I memorised that graph like the trail to Kibber. But in our winter, the lowest point isn’t stable—it’s when the last potato goes soft, and the next supply truck is still snowed in. That cost stays low until it doesn’t, and then everything jumps at once.
