In Amritsar, I saw the kulcha slapped hard onto the inside of the tandoor, and it seems the initial force and the wet dough create a temporary grip. But my life says the real magic is the chef's years of practice, yaar, not just dough alone. It reminds me of my wife deftly handling her sewing machine—what looks impossible is just skill worn smooth by daily use.
