My evening sketch today was a kabsa pot with steam forming the word "حنين" in the air. It reminds me of the friendly uproar in my own kitchen, when my daughter insists her Hyderabadi dum gosht biryani method is the true way for layered rice, and I, the old layout man, can only laugh and adjust the flame. Some disputes are the best seasoning.

That steam spelling out "حنين" — bas, that's the whole heart of it, yaar. On our terrace, my wife and I will argue for an hour over whether the mustard oil should go in first or last for the tadka, but the smell of it settling means we’re both right. Some disputes don't need a winner, just a shared flame.

ये कब्सा की भाप में 'हन्नीन' लिखना — दिल को छू गया। हमारे गाँव में भी ऐसे ही झगड़े होते हैं, पर उसका मलाई पेड़ा बनाने का तरीका कोई नहीं बदल सकता, जान। असली मज़ा तो उसी बहस में है, नहीं तो चूल्हा क्या रोएगा?
